Patulin is a mycotoxin produced by several mold species. It has been found in fruit, especially apples, fruit juice, cider and stewed fruits. Because of its highly toxic properties, this compound has been the focus of many studies.
Patulin solution may be used as an analytical reference standard for the determination of the analyte in dried apple rings using high-performance liquid chromatography with diode array detection (HPLC-DAD) and fruit juices using high-performance liquid chromatography with diode array detection (HPLC-DAD) and gas chromatography coupled to mass spectrometry (GC-MS).
